best-pecorino-pienza-2015The cheeses of the Organic Farm Podere Il Casale, in the heart of the Val d’Orcia – a UNESCO World Heritage site since 2004.

Since 1991, our two hundred Sardinian breed sheep have grazed the pastures surrounding Podere Il Casale for the production of raw milk pecorino and goat cheese, a true expression of uniqueness and quality, and a representation of the Pienza territory.

Our raw milk cheeses are made with milk that undergoes no pasteurization or sterilization process. During production, its temperature never exceeds 40°C, requiring the highest level of attention and care during the cheesemaking process to obtain a high-quality raw cheese. The result is a flavorful raw milk cheese, with its own identity and strong character, which can have a different taste and visual appearance depending on the climate and the animals’ diet from season to season.
