
Discover our cheeses of the Organic Farm Podere Il Casale, in the heart of the Val d’Orcia – UNESCO World Heritage since 2004.
Since 1991, our two hundred Sardinian sheep have been feeding on the pastures surrounding Podere Il Casale for the production of pecorino and goat cheese, organic raw milk that is an expression of uniqueness and quality, and a representation of the territory of Pienza.
Our raw milk cheeses are made from milk that does not undergo any pasteurization or sterilization process. Its temperature in production never exceeds 40 degrees, requiring very high attention and care during the cheese making process to obtain a high quality raw cheese.
The result is a savory cheese from raw milk, with its own identity and great character, which depending on the climate and feed of the animals can have a different taste and visual appearance from season to season.
