Cooking Class, Fresh Pasta & Pizza

Our Cooking Classes with Sandra are a journey through the flavors and aromas of Tuscan cuisine.

Here, guests learn the techniques for preparing authentic dishes—from hand-made fresh pasta such as Pici, a traditional Tuscan specialty, to pizzas baked in a wood-fired oven—always enriched with practical tips and culinary insights.

It’s more than just a class: it’s an experience and a moment of sharing, where food becomes the language of a wonderful cultural exchange.

Cheese Making

Taking part in cheese making with Ulisse means discovering the secrets of an ancient craft.

From milking to transforming the milk into traditional cheeses, every gesture is carried out with care and respect for the raw ingredients.

Participants not only learn artisanal techniques—useful even for making cheese at home—but also experience firsthand the daily life of our dairy.

Truffle Hunting

Truffle hunting in the Val d’Orcia is an authentic, exciting, and immersive adventure.

Guided by our experts and their truffle dogs, participants learn how to read nature’s signs and search for one of Tuscany’s most precious treasures: the white truffle.

It’s an activity that blends tradition, nature, and deep knowledge of the territory.

Tasting Tour

The Podere Il Casale Tour is a complete guided visit of our farm, where guests dive into modern rural life here in the Val d’Orcia.

From the barn to the dairy, you’ll get to know our animals—from donkeys to peacocks to sheep—and discover their role on the farm.

The tour continues in the cheese dairy, where you’ll learn the secrets behind our cheeses, including the traditional Pecorino, and see the production process firsthand.

The experience ends with a tasting of our raw-milk cheeses paired with our organic wines.
