FROM THE SUMMER HARVEST TO THE FLAVORS OF AUTUMN
With the arrival of autumn, the organic vegetable garden at Podere Il Casale transforms, revealing the authentic rhythm of the seasons.
Eggplants, peppers, and tomatoes—the undisputed stars of summer—make way for autumn vegetables, ready to bring new flavors and colors to our tables.
The New Stars of the Garden
Lettuce continues to accompany us even in the cooler months, along with leeks, spring onions, and puntarelle (chicory), which begin to grow abundantly among the rows.
It is also cabbage season: black cabbage, white and red cabbage, and various types of cabbage heads, as well as Savoy cabbage and cauliflower.
In a few weeks, they will be ripe and ready to become ingredients for wholesome dishes rich in traditional rural flavors.
The Return of Artichokes
After the summer rest, artichokes resume their vegetative cycle. The plants regrow with renewed energy to give us their unmistakable-flavored fruits next spring. This eagerly awaited return further enriches the biodiversity of our organic garden.
An Extraordinary Pumpkin Harvest
This year, the land has given us an exceptional pumpkin harvest—almost 800 pieces! This result reflects not only the fertility of the soil but also the passion and constant care we dedicate to our organic and biodynamic cultivations.
Saffron: The Gold About to Bloom
Among the rows, the first saffron shoots are peeking through. In just a few weeks, the flowers will bloom, providing us with the precious stigmas with their intense color and unmistakable fragrance.
A rare and valuable spice, capable of transforming any dish into a unique experience.
Each Season Brings New Gifts
The organic vegetable garden at Podere Il Casale is the truest reflection of this.
Here, the land sets its own pace, and we follow it with respect and gratitude, harvesting the fruits of an ancient and ever-living cycle.
