
FUSILLI RECIPE WITH GARLIC, OLIVE OIL, AND BROCCOLI

Ingredients:
- 400 g fusilli pasta
- 2 cloves garlic, thinly sliced
- 1 fresh peperoncino pepper, chopped – adjust the amount to your preferred level of spiciness
- 1 small head of broccoli or Romanesco broccoli (about 300 g)
- A generous drizzle of extra virgin olive oil
- 80 g grated pecorino or parmesan cheese
Preparation Time: 20 minutes
Instructions:
- Bring a large pot of generously salted water to a boil over high heat. Trim and cut the broccoli into florets, then add it to the boiling water and cook until al dente, about 10 minutes.
- While the broccoli is cooking, prepare the sauce by combining the olive oil, garlic slices, chopped peperoncino, and a pinch of salt in a large skillet. Cook the mixture slowly over low to medium heat, allowing the oil to absorb the flavors. Using a slotted spoon, remove the cooked broccoli from the water and add it to the skillet. Continue cooking over low to medium heat.
- Cook the fusilli in the same water where you cooked the broccoli for 7-8 minutes, or one minute less than the package instructions – the pasta should be just shy of al dente.
- When the pasta is nearly al dente, transfer it to the skillet with the oil mixture, adding a bit of the reserved pasta water before draining. Turn the heat to medium-high and stir vigorously until the sauce emulsifies – add pasta water gradually, one tablespoon at a time, until reaching the desired creamy consistency.
- Remove from heat, sprinkle with grated pecorino or parmesan cheese, and serve.
