Ingredients:

  • 400 g fusilli pasta
  • 2 cloves garlic, thinly sliced
  • 1 fresh peperoncino pepper, chopped – adjust the amount to your preferred level of spiciness
  • 1 small head of broccoli or Romanesco broccoli (about 300 g)
  • A generous drizzle of extra virgin olive oil
  • 80 g grated pecorino or parmesan cheese

Preparation Time: 20 minutes

Instructions:

  1. Bring a large pot of generously salted water to a boil over high heat. Trim and cut the broccoli into florets, then add it to the boiling water and cook until al dente, about 10 minutes.
  2. While the broccoli is cooking, prepare the sauce by combining the olive oil, garlic slices, chopped peperoncino, and a pinch of salt in a large skillet. Cook the mixture slowly over low to medium heat, allowing the oil to absorb the flavors. Using a slotted spoon, remove the cooked broccoli from the water and add it to the skillet. Continue cooking over low to medium heat.
  3. Cook the fusilli in the same water where you cooked the broccoli for 7-8 minutes, or one minute less than the package instructions – the pasta should be just shy of al dente.
  4. When the pasta is nearly al dente, transfer it to the skillet with the oil mixture, adding a bit of the reserved pasta water before draining. Turn the heat to medium-high and stir vigorously until the sauce emulsifies – add pasta water gradually, one tablespoon at a time, until reaching the desired creamy consistency.
  5. Remove from heat, sprinkle with grated pecorino or parmesan cheese, and serve.
