
Honey cake
It is a perfect spring cake that recalls the beginning of the honey harvest. With the Honey of the Farm Il Casale we have studied this simple but delicious recipe for a sweet breakfast or for an energetic afternoon snack!
Ingredients:
3 eggs
170 gr honey, we used our honey of millefiori, but you can also use the honey of Sulla and Trifoglio
170 g natural yogurt
150 ml extra virgin olive oil
300 g flour type 1
16g of baking powder
Preparation: 50 minutes
1- Preheat the oven to 180 °C/350 °F. Lightly oil and line a baking sheet with parchment paper.
2- In a bowl, mix the eggs and honey together for about 3 minutes, until the honey is liquefied and the mixture is foamy. Add the yogurt and olive oil and mix for another minute.
3- Gradually add the olive oil and flour and bake, alternating between flour and oil and stirring well after each addition. Once you have added all the flour and oil and the batter is smooth, pour it into the pan and bake in a static oven for about 40 minutes. We recommend the test of the toothpick in the center of the cake to verify that it is cooked. Let cool for ten minutes before serving on a plate.
4- To serve, pour 1-2 tablespoons of honey over the cake – if the honey is very dense, we recommend softening it by adding a teaspoon or two of hot water and stirring until you have a smoother consistency suitable for spread on the cake.
