
May in Bloom: The Precious Sulla Honey of Val d’Orcia is Born
With the month of May, the hills surrounding Podere Il Casale turn in a vivid pink: it’s the blooming season of Sulla (Hedysarum coronarium), a spontaneous herbaceous plant that especially carpets the hilly slopes of the Val d’Orcia thanks to its mild climate and limestone-rich soil—an ideal habitat for this legume. Sulla is a valuable plant for both agriculture (see article… link) and Tuscan beekeeping.
Thanks to this bloom, we produce one of the most delicate and least known honeys: Sulla honey, a true gem of Val d’Orcia’s beekeeping tradition.
What is Sulla honey and why is it so special?
Tuscan Sulla honey is known for its light color (ranging from nearly white to pale yellow when crystallized) and its sweet, mild flavor, with floral and herbal notes that make it ideal for those who prefer honey that isn’t too intense.
In addition to its refined taste, it:
- is rich in natural antioxidants (polyphenols),
- contains B vitamins and minerals like calcium, magnesium, and iron,
- has purifying, diuretic, and tonic properties,
