October in the Casale Organic Garden with Saffron and Seasonal Vegetables
Autumn at Podere Il Casale is a time of precious harvests and vibrant colors. Among the most announced treasures of our organic garden is Saffron, the famous “golden spice,” which begins to bloom and be harvested in October.
Each flower is carefully hand-picked in the early morning, when the dew still makes it fresh and fragrant, and from each small flower, the red stigmas are extracted, creating this unique and unmistakable spice.
The saffron grown at Casale is more than just a spice: it is the result of careful, organic cultivation, free from pesticides and chemicals, and represents one of the highlights of our garden.
Thanks to hand harvesting and delicate processing, each stigma retains its aroma, color, and nutritional properties, making it perfect for cooking, from soups and risottos to traditional desserts.
But October isn’t only about saffron: it is also the time when the garden offers seasonal vegetables, ideal for wholesome autumn dishes.
These include:
- Cabbages and broccoli, rich in vitamins and perfect for soups and hearty side dishes;
- Chard and leeks, great for creamy soups and savory pies;
- Tuscan black cabbage (cavolo nero), ready for soups and ribollita with its deep, intense flavor.
All harvesting is done in full respect of natural cycles, following the rhythms of the season and maintaining the biodiversity of the garden.
So, between the bright red of saffron and the deep green of autumn vegetables, the Casale garden offers high-quality organic produce, ready to bring authentic and wholesome flavors to your table.
