What are the secrets to produce a good olive oil? Listen to Massimo, who is the protagonist of this new episode of “Ti Presento Podere Il Casale”. Olive harvesting at Podere Il Casale is a special moment, where we collect the fruits of a year’s work and we face with the seasonal trend. Bring the olives to the crusher and wait for the first new olive oil drop is always an emotion.
At Podere Il Casale we have about 4000 olive trees among Pienza and Monticchiello, they are many and require a lot of work. The first harvest of olives we made in 1991 and we soon realized that the quality of the oil is based on the purity of the ingredients. At Podere Il Casale we do not use any chemical agent. We are lucky for the position of our olive trees, about 500 meters above sea level, planted according to ancient traditions and therefore the olives can only be harvested by hand.
The last few years for the production of oil have been quite difficult. The olives harvest 2017 in our area was certainly poor. We harvest about 50/60% less than last year but the quality of the olives is great. Surely the 2017 harvest is low but the olives and olive oil are of the highest quality. Our olives are brought to a family-run artisan crusher where they are cold-pressed and temperature never exceeds 30 ° C. Our organic olive oil is finally available!
Massimo during the harvest of olives 2017 tells you the secrets to produce a good olive oil, the difficulties and the most beautiful things of his work. Watch the video.
