Welcome to our complex yet extraordinary Organic Farm – Podere Il Casale. In the heart of the Vald’Orcia, UNESCO World Heritage Site since 2004, Il Casale is the perfect union between wonderful natural features and the loving dedication of the people who live and work here.
When Sandra and Ulisse founded Il Casale in 1991, the first thing they planted was a dream – to achieve food autonomy whilst producing good, clean, and fair food – for their family, for their guests and for the local retailers.
Life in the farm grew one step at a time: first came the olive trees, vines and wheat, followed by other farming activities such as bee keeping and the setting up of our organic vegetable garden. Later came pigs, sheep and goats, and the icing on the cake – our dairy farm.
Today it is the cheeses produced with our dairy farm’s raw milk that make this place unique.
In 2008 Podere Il Casale’s goat cheese was awarded first place at the national organic cheese contest Le forme del Bio. In 2014 our fresh pecorino won the first prize in a Pecorino di Pienza contest. Our farm is constantly evolving thanks to a team of trusted professionals and the participation in the farming activities of people from all over the world.
With the help of solar and photovoltaic systems, Podere Il Casale is self-sufficient both food- and energy-wise.
In our organic farm, time is marked by the rhythm of nature. When planning our work, we prioritize the respect towards the farm ecosystem over the common practices of traditional agriculture, which are driven by (only apparent) profit. Our farm has its own restaurant, Farm-to-Table, a small campsite with a breathtaking view over the Tuscan hills, a dairy farm, a kitchen area where cooking classes take place and an on-site shop providing fresh organic products every day.
