Sheep Yogurt

Have you ever tried sheep yogurt? At Podere Il Casale we produce organic yogurt with the milk of our sheep grazing on the meadows of our farm in Pienza, in the heart of Tuscany.

Sheep yogurt is a little used product because market is dominated by cow’s milk yogurt. Compared with the yogurt cow, however, sheep yogurt has a more delicate and pleasant taste and greater digestibility.

The organic sheep yogurt of Podere Il Casale is a handicraft product obtained with 100% raw milk of our sheep and without the addition of sugar. Compact and creamy has an intense aroma, typical of sheep’s milk. Very good, suitable for breakfast, for a tasty snack or for preparing many recipes.

Recipes with sheep yogurt

A great recipe with sheep yogurt is the traditional Greek recipe of Tzatziki.
Simple and tasty tzatziki is an ideal summer recipe. To prepare it, crush two cloves of garlic, add about two tablespoons of extra virgin olive oil and the juice of half lemon. Finally add the sheep yogurt and mix well. Grate a cucumber and let it drain. Add a pinch of salt and mix it with yogurt.

Sheep yogurt is also great for preparing cakes and desserts such as cheesecake. Here is the cheescake recipe with sheep yogurt. For the base whip the biscuits with melted butter. Consider about 250 g of biscuits per 100 g of butter. Press the base on the bottom of a baking tray with baking paper and let it rest in the fridge. For the cream, melt 15 g of gelatine in 100 ml of freshly boiled cream. Then add 500g of sheep yogurt and 100g of icing sugar. Continue to mix until you get a creamy mixture. Pour the mixture on biscuits’ base and let it rest in the fridge for about 5 hours.

Yogurt Benefits

Yogurt is coagulated milk by bacteria and has great beneficial properties for our health. It contains minerals such as calcium, sodium, phosphorus, potassium, magnesium and vitamins such as vitamin A, vitamin B1, vitamin B2 and vitamin C. Yogurt contains on average two million live lactic ferments per 100g of product and these ferments are responsible for numerous benefits for our health.

  • Yogurt helps the intestine. Yogurt consumption determines the bacterial replacement of our intestines by increasing the beneficial intestinal flora.
  • Yogurt helps the immune system. Yogurt consumption helps to strengthen the immune system against fungi, bacteria and viruses.
  • Yogurt helps digestion.
  • Rebalancing action. Yogurt contains a fair ratio of protein and carbohydrates and a high amount of water.

Differences between sheep yogurt and cow yogurt

Compared with cow’s milk, sheep’s milk is more caloric with about 40 Kcal per 100ml of product. This is due to a higher lipid content (+3 g per 100ml), protein (+2g per 100ml) and glucid (+0.5g per 100ml). The amount of fats between cow and sheep milk is basically in balance and the ratio of saturated fats to polyunsaturated fats is 0.1.
Compared with cow’s milk, sheep’s milk provide a greater amount of retinol and calcium.
The substantial difference between sheep yogurt and cow yogurt is in the energy supply that is considerably higher in sheep’s milk.
