ASSO is a Tuscan white wine made from 70% organic Malvasia Lunga of Chianti and 30% Trebbiano grapes – IGT Toscana Bio.

The name Asso recalls the Tuscan playing card, a symbol of strength and uniqueness: just like this limited production, designed to stand out for its character and personality from the other wines of Podere Il Casale.
This wine was created by Rino of Podere Il Casale with the aim of enhancing two historic grape varieties from Central Italy – Trebbiano and Malvasia Lunga of Chianti – and reinterpreting them in a contemporary style.
It is a young, fresh, and floral wine, but with a surprising taste persistence that makes it particularly gastronomic.
On the nose, a wide and layered floral bouquet emerges, reminiscent of orange blossom, peach, and almond flowers. The freshness is enhanced by the early harvest and the altitude of the vineyard at Podere Il Casale.

Despite Asso’s lightness and freshness, it is a highly gastronomic wine that pairs perfectly with Tuscan appetizers, fresh cheeses, cold pasta dishes, first courses with vegetable sauces, light ragù, and white meats. It also pairs well with more substantial fish dishes.
It is recommended to serve at a temperature of 12 °C.
Vinification:
Hand-harvested in crates
Fermentation at controlled temperature for approximately 10 days
Aged in stainless steel with bâtonnage on fine lees
