For the salami we use the chosen lean and shoulder with the addition of fat from the same animal. The mixture is flavored with salt, ground pepper and then stuffed and tied up and left to mature in suitable rooms. The seasoning lasts for at least sixty days at the end of which the product is covered with the characteristic molds that affect the appearance and aroma of the product. The slice has a beautiful red-brown color with evident cubes of white fat. Aroma and perfume are characteristic as well as the softness and delicacy of the fat that melts in the mouth. We recommend eating salami as it is as it enhances the aroma, remembering to always peel the product before slicing so as not to transmit foreign flavors to the slice itself. Like all our products, no preservatives and chemical additives, gluten, lactose and milk derivatives are added.
