Our white wine Sibilla 2019 Toscana I.G.T shows a typical female figure of a tuscan card game. The image of the Sibyl holding a “cup” in her hand is quite evident in its meaning: it is the offer of the wine itself, a sort of toast to you.
The wine shows a straw yellow color tending towards amber with notes of straw. The nose is lively with hints of acacia honey, apricot and yellow peach. The mouth is agile and lively, in the finish we can find fresh Mediterranean notes with a good acidity and an excellent acid boost to finish off.
The vinification had a 1-day maceration (contact with the skins), after a soft pressing and fermentation with indigenous yeasts without adding sulfur dioxide until bottling. A spontaneous malolactic fermentation followed without any clarification intervention. Small addition of sulfur dioxide before bottling.
The vineyards of our Sibilla have followed for more than 40 years Guyot and Tuscan upside down cultivation. The terroir is dominated by clayey limestone soil. 3000 plants per hectare, with a production of around 40 quintals per hectare. The management of the vineyards is organic and follows the practices and principles of biodynamic agriculture.
Variety: Tuscan Trebbiano with a little Tuscan white Malvasia
Pairings: fresh cheeses, vegetables, fish, pizza and non-creamy cocoa and fruit-based desserts.
