Our eighty goats from the breed Saanen, Camosciata delle Alpi, Verzasca and mixed goats graze on the meadows and pastures that surround our farm property, immersed in the biodiversity of the Val d’Orcia, since 1991. The French goat cheese from Podere il Casale is made by lactic coagulation for 24 hours with a grainy texture and a sour and sweet taste if it is fresh, creamy and spicy with a noble mould on its outside if slightly seasoned. The excellent aromatic and nutritional properties of our goat milk, which are preserved by slow acidification, make it a product with a very distinctive flavor.
Our French goat cheese is fantastic as an appetizer with dried fruit and a glass of prosecco, or at the end of a meal with cantucci and Vin santo. Many also use it in the kitchen to give freshness to dishes such as risotto or pasta – cut into cubes.
This fresh cheese can be shipped only within Italy.
