This pecorino cheese is aged three to five months in bran. Made from 100% raw sheep’s milk, this cheese is mild with a slight sweetish-nutty note thanks to the bran from our ancient grains. The birth of this cheese was a result of the italian “mezzadria” system, where a certain amount of the crop and production had to be given to the landlord. Clever cheesemakers hid the cheesewheels under ashes, in wine or under bran.

This pecorino is perfect with a young red wine, not to powerful – such as our Fante.
