The saddle is the anatomical piece of the pig that goes from the neck to the ham and corresponds to the anatomical area of the loin including the lard and its rind. It is prepared by massaging the piece with a mixture of salt, pepper and crushed garlic and then covered for three days at the end of which it is washed and left to mature in special rooms. The product lends itself very well to long aging.
