The Saffron Harvest Season Has Arrived!

During the harvest season in October, the flowers must be collected at dawn each day, before their petals open and reveal their pistils —  which, once dried, become the saffron threads we use as a spice.

They are hand-picked from the flowers, one by one, sometimes for hours on end.

This is why saffron is so precious, and why we have a renewed appreciation for this delicate but flavorful spice.

HOW TO GROW SAFFRON

Saffron comes from the three small pistils of the flower (Crocus sativus flower). To produce just 1 gram of saffron, we must collect 150 flowers before dawn and dedicate many hours of manual labor to separating and drying the pistils.

HOW TO USE SAFFRON

Saffron is used in both sweet and savory recipes and beverages.

Just place three saffron threads per serving in a cup of warm water or milk, let it steep for 10 minutes, and then add the liquid to the dish you’re preparing: rice, pasta, vegetables, eggs, pastries, and much more.
