Winemaking is the moment when the work of the harvest meets the cellar: it is the process that transforms freshly hand-picked grapes into wine, enhancing their aromas, structure, and personality.
At Podere Il Casale, this stage is carried out with the same care and attention we devote to cultivating our organic and biodynamic vineyards, in full respect of the natural rhythms of the land and the grapes.
We cultivate two traditional Tuscan grape varieties: Sangiovese for red wine and Trebbiano for white wine — both interpreted through an organic and biodynamic approach for our “natural wines”.
Every bunch is carefully hand-selected, following organic farming principles, without the use of pesticides or chemical products, and in harmony with the natural cycles of the soil and plants.
Throughout the winemaking process, the organic and biodynamic philosophy guides every choice:
- Natural yeasts present on the grapes, with controlled but unforced fermentations;
- Minimal intervention in the cellar, allowing the wine to fully express its terroir;
- Attention to lunar and seasonal cycles, which influence key winemaking moments according to biodynamic principles.
In this way, every bottle tells the story of Il Casale, where technique meets nature, and the wine carries with it the essence of the soil, the harvest, and the passion of our winemakers.
