A Fresh Summer Recipe Straight from the Garden
In the heat of summer, our meals naturally become lighter. This simple zucchini carpaccio showcases just how delicious raw vegetables can be when harvested at the right moment. At Podere Il Casale, we pick the zucchini while they’re still small, when the flesh is firm and white. Combined with fresh mint, lemon, extra virgin olive oil, and a sprinkle of mature pecorino, this dish is a true celebration of Tuscan summer.
Zucchini Carpaccio Recipe
Preparation time: 10 minutes
Serves: 4 people
Ingredients:
- 2 medium-sized zucchini
- 1 fresh peppermint sprig
- ½ lemon (juice and zest)
- A glug of extra virgin olive oil
- 40 g mature pecorino or Parmigiano, shaved
- Salt and freshly ground black pepper
Instructions:
- Using a sharp knife, potato peeler, or mandolin, slice the raw zucchini lengthwise into thin strips.
- Arrange the zucchini on a plate. For a more artistic presentation, roll a few strips and place them on top.
- Tear the mint leaves and scatter over the zucchini.
- Season with salt, pepper, and lemon zest.
- Drizzle with lemon juice and extra virgin olive oil.
